Dear Chef Bryce,

A simple thanks seems so benign compared to the amazing and spectacular job you did catering our company Christmas party December 3, 2005,

From the moment we spoke on the phone and began planning our event, I knew you would be the utmost professional and that you would impress us all with not only your extensive culinary expertise, but your charm and wit as well. Your menu selection had us all salivating even before we tasted the end result. You did not disappoint! Your years of culinary training came through in every aspect of the evening,

The appetizers were of the highest quality and quite generous in proportion. We all particularly loved the crab cakes and accompanying sauce. The salmon you surprised us with was so elegantly presented and so detectable. The chicken skewers and barbecue meatballs were a huge hit with all the men!

The main courses including the prime rib and mushroom strudel were divine! No five star restaurant could do better! All of the accoutrements you provided were excellent and of the freshest ingredients. The food just kept on coming all evening. No one was ever left hungry or with an empty plate.

As if that were not enough, you truly outdid yourself with the chocolate fountain and “the to die for” desserts! Our only complaint is that we all ate so much we had to wait hours before we could enjoy all the fabulous desserts you made. From the “signature carrot cake” to the delectable and decadent turtle torte, you truly amazed and impressed not only our employees but our clients as well. It is a pity I can't have you around every day!

I also have to compliment you on arriving so early to transform my dining room into the most beautiful dining hall I have ever seen! The time and meticulous attention you paid to every detail including the lights and flowers alone were evident all evening! Everyone complimented me all night on how beautiful the place was, how great the spread was, and what a delight you and Sybil were.

To top it all off, you left my kitchen and dining room cleaner then when you arrived! That alone is worth a fortune! As any person can attest to, the cleanup after a party is the only downside to entertaining. You made entertaining so effortless, all Thad to do was turn off the lights and go to bed! Can I just keep you?
